Tres Leches Cake and Miracle Fruit

 Recipe by Homaro Cantu in The Miracle Berry Diet CookbookMakes one 13 by 9-inch cake, 12 servings.

Ingredients
  • Canola oil spray
  • 1 cup unbleached all-purpose flour
  • 1 1/2 teaspoons baking powder 1
  • /4 teaspoon salt
  • 4 large eggs, separated
  • 1/4 cup agave nectar 1
  • teaspoon pure vanilla extract
  • 2/3 cup freshly squeezed grapefruit juice
  • 1/3 cup freshly squeezed lime juice
  • 1/3 cup grated lemon zest
Directions
  1. Preheat the oven to 350 degrees F. Spray a 13 by 9-inch baking pan with canola oil.
  2. Combine the flour, baking powder, and salt in a large bowl.
  3. In a separate bowl, beat the egg yolks with 2 tablespoons of the agave nectar on high speed until pale yellow.
  4. Stir in the vanilla, 1/3 cup of the grapefruit juice and the lime juice. Add to the flour and gently combine.
  5. With an electric mixer, beat the egg whites on high speed until soft peaks form.
  6. With the mixer running, add the remaining 2 tablespoons agave nectar and beat until egg whites are stiff but not dry.
  7. Fold in the lemon zest.
  8. Gently fold egg whites into the rest of the batter, being careful not to deflate the egg whites.
  9. Pour into the pan and smooth the top.
  10. Bake for 35 to 45 minutes or until a toothpick comes out clean.
  11. Invert the cake onto a rimmed platter and allow to cool.
  12. When cake is cool, pierce the surface with a fork several times.
  13. Slowly drizzle the remaining 1/3 cup grapefruit juice onto the top and down the sides of the cake.
  14. Let the cake absorb the juice for 30 minutes.
  15. Frost the cake with Mascarpone Frosting.

Mascarpone Frosting

This is a simple recipe that uses lime juice as the sweetener. Makes 1 1/2 cups.

Ingredients
  • 1 1/2 cups cold heavy cream
  • 3 tablespoons agave nectar
  • 1 cup mascarpone cheese, softened
  • 3 tablespoons grated lime zest
  • 1/4 cup freshly squeezed lime juice
Directions
  1. With an electric mixer, in a large bowl whip the cream with the agave nectar until soft peaks form.
  2. Gently fold in the mascarpone, lime zest, and lime juice.

When you are ready to eat, let the Miracle Berry tablet dissolve on your tongue and then enjoy the dish.
