Recipe by Homaro Cantu in The Miracle Berry Diet Cookbook. Makes 10 servings.
Ingredients
- Canola oil spray
- 3 3/4 cups cake flour
- 3 tablespoons baking powder
- 1 tablespoon salt
- 6 large eggs
- 1 cup whole milk
- 1/2 cup freshly squeezed lemon juice
- 2 tablespoons grated lemon zest
- 1/4 cup honey
- 1/4 cup poppy seeds
Directions
- Preheat the oven to 350 degrees F. Spray a 10-inch Bundt pan with canola oil.
- Sift the flour and baking powder into a large bowl. In another bowl, whip the eggs until bubbly.
- Add the milk, lemon juice, lemon zest, honey and poppy seeds, whipping for another 3 minutes until light and fluffy.
- Carefully fold the wet ingredients into the flour until incorporated.
- Pour the batter into the Bundt pan and bake for 25 minutes or until a toothpick inserted into the middle comes out clean.
- Cool for 30 minutes in the pan on a wire rack. Invert the cake onto a wire rack to cool completely.
- With an electric mixer, beat the goat cheese, milk, salt, and lemon juice until creamy.
- Drizzle with Goat Cheese Frosting and serve.
NOTE: If you don’t have cake flour, you can make your own. For every cup of cake flour needed, place 2 tablespoons of cornstarch in a 1-cup measure, then fill the rest of the cup with all-purpose flour. Sift the ingredients a few times to aerate the mixture.
Goat Cheese Frosting
This frosting recipe uses goat cheese and lemon juice for sweetening. Makes about three cups.
Ingredients
- 1 1/2 cups fresh goat cheese (6 ounces), softened
- 1 cup skim milk
- 1/4 teaspoon salt
- 1/2 cup freshly squeezed lemon juice
Directions
- With an electric mixer, beat the goat cheese, milk, salt, and lemon juice until creamy.
When you are ready to eat, let the Miracle Berry tablet dissolve on your tongue and then enjoy the dish.
Replacing 2 cups of sugar with 1/4 cup of honey and the sweetness from the berry saves 160 calories per serving. The Goat Cheese Frosting saves an additional 51 calories per serving by replacing 2/3 cup of sugar with the sweetness from the berry saves 171 calories per cup.
