Lemon Poppy Seed Cake, Goat Cheese Frosting, and Miracle Fruit

This is an unexpected pairing in a dessert—lemon and goat cheese . . . but with a miracle berry, absolutely amazing. For this cake, we have used the natural acidity from the lemon to add sweetness, and we eliminated the sugar.

Recipe by Homaro Cantu in The Miracle Berry Diet CookbookMakes 10 servings.

Ingredients
  • Canola oil spray
  • 3 3/4 cups cake flour
  • 3 tablespoons baking powder
  • 1 tablespoon salt
  • 6 large eggs
  • 1 cup whole milk
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons grated lemon zest
  • 1/4 cup honey
  • 1/4 cup poppy seeds
Directions
  1. Preheat the oven to 350 degrees F. Spray a 10-inch Bundt pan with canola oil.
  2. Sift the flour and baking powder into a large bowl. In another bowl, whip the eggs until bubbly.
  3. Add the milk, lemon juice, lemon zest, honey and poppy seeds, whipping for another 3 minutes until light and fluffy.
  4. Carefully fold the wet ingredients into the flour until incorporated.
  5. Pour the batter into the Bundt pan and bake for 25 minutes or until a toothpick inserted into the middle comes out clean.
  6. Cool for 30 minutes in the pan on a wire rack. Invert the cake onto a wire rack to cool completely.
  7. With an electric mixer, beat the goat cheese, milk, salt, and lemon juice until creamy.
  8. Drizzle with Goat Cheese Frosting and serve.

NOTE: If you don’t have cake flour, you can make your own. For every cup of cake flour needed, place 2 tablespoons of cornstarch in a 1-cup measure, then fill the rest of the cup with all-purpose flour. Sift the ingredients a few times to aerate the mixture.
