National Cookie Day might only come once a year, but every day is a good day to celebrate cookies with a cold glass of milk.

These are best served with the Freeze Dried Miracle Berries. Look for the bonus recipe below for all of our chocolate lovers out there. 

 

Lemon Drizzle Cookies

Prep Time: 10-15 mins   |   Cook Time: 12 mins 

Total Time: 30 mins   |   Makes 8 Cookies

Ingredients:
  • 1 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar alternative (See Test Kitchen Note)
  • Zest of 2 lemons
  • 1/2 cup avocado oil or equivalent
  • 1/2 teaspoon vanilla
  • 4 tablespoons powdered sugar alternative
  • 2 teaspoons lemon juice

Instructions:

Preheat oven to 350 degrees F. Line baking sheet with parchment paper. Combine baking powder, salt, and flour in a small bowl. Mix lemon and sugar together. Add in oil and egg and mix until combined. Slowly add dry ingredients to wet ingredients until smooth. Make 2-inch balls of dough and place on cookie sheet. Flatten with spoon. Bake for 12-14 minutes or until golden brown. Let cookies cool. Combine powdered sugar and lemon juice and drizzle over the cookies. Eat with miracle berry!



Chocolate Chip Espresso Cookies

Ingredients:

  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 - 1 teaspoon instant espresso powder (1 teaspoon = Strong)
  • 1/2 cup avocado oil or equivalent
  • 1/4 cup sweetener alternative (See Test Kitchen Note)
  • 1 egg
  • 1/4 cup chocolate chips
  • Optional: 1/4 cup chopped walnuts

Instructions:

Preheat oven to 350 degree F. Line baking sheet with parchment paper. Combine flour, baking powder, salt, espresso power, and cocoa powder in a small bowl. In  another bowl, mix together sugar and oil, then add egg. Slowly add flour to sugar mixture and mix just until combined. Fold in chocolate chips and walnuts. Make 2-inch balls of dough and place on cookie sheet. Flatten with spoon. Bake for 12-15 minutes or until set and golden brown. Allow cookies to cool. Eat with miracle berry!

    Authors Notes: When choosing alternative flour, oil and sugar, it is important to note that they have different consistencies and flavors. For example, oat flour is going to be more dense than regular white flour and butter has different properties than olive oil. We suggest using ingredients you feel confident using and have on hand, but this may take trial and error 

    Test Kitchen Notes: Use sweetener such as Swerve or Monk Fruit. Be sure to read the instructions on the back as the ratio of white sugar to sweetener will vary and will determine how sweet your cookie is. We used sweetener by Swerve and that is how we came up with our measurements. Anything smaller than 1/4 cup will require less oil in the recipe. However, we did also test this recipe with coconut sugar which used 1/3 cup.
